Ground Chicken Fajita Pasta Quarantine ground chicken recipes, healthy ground chicken recipes
1 medium onion
3 black peppercorns – chopped (any colour is fine)
4 cloves garlic – minced
4 Tbsp chilli powder – (I use 3 chilli powder + 1 hot Mexican chilli powder for a kick)
1 tbsp smoked paprika.
1 teaspoon cumin
1 tbsp oregano.
1 tbsp salt.
1/4 tsp black pepper
2 – 15 oz tomato sauce.
1 pound pasta (small shells or herbs work well)
2 1/2 c chicken broth.
1/2 c sour cream.
1/4 c cilantro – minced
1 c cheddar cheese – shredded
Heat oil on medium heat, add onion and garlic, cook for a few minutes, add capsicum, stirring occasionally. Season with salt and pepper. Add ground chicken, smoked paprika, cumin, oregano and chilli powder, cook until meat is pink, stir in tomato sauce. Add chicken broth and drained pasta.
Cover and cook until pasta is soft, while stirring occasionally. It takes about 15-20 minutes on medium heat on.
Turn off the heat, once the pasta is cooked, add sour cream and red pepper. Top with Cheddar cheese, cover until tender.
Serve over melted cheese.
